Pour 15ml silverskin onion water/juice (from a jar) and 10ml freshly squeezed lime juice into a cocktail shaker. Add 1 small slice peeled fresh ginger, 2-3 slices jalapeño and a few sprigs of coriander. Muddle then strain into an ice-filled wine glass. Top up with The London Essence Co. Spiced Ginger Beer. Garnish with a coriander sprig, lime shell and jalapeño slice. PRICKLY PEAR & TURMERIC COOLER A refreshing fruity drink – the pinch of salt adds a different flavour dimension. Put 1 peeled pear half, 15ml juice from a tin of pear halves and 35ml Waitrose Turmeric Shot in a highball and muddle until the pear is a purée. Add a pinch of sea salt and stir. Add ice cubes to the glass, fill with Sekforde Prickly Pear, Fig & Cardamom Mixer and stir to mix. Garnish with a pear slice. BLOOD ORANGE & OLIVE SPARKLER The salty olive brine and the sour lemon enhances the blood orange soda, giving it a depth of flavour that has umami notes (salty, sweet and sour). Pour 5ml olive brine (from a tin or jar) and 5ml freshly squeezed lemon juice into a Champagne flute and top up with chilled Fever-Tree Italian Blood Orange Soda.
