So, with a marketing background in the drinks industry and the drive to shake things up, she created her own non-alcoholic spirits. “I must have developed 100 different versions, sampling them with over 150 bartenders for feedback, so it was a real learning curve,” she says. “We were one of the industry pioneers, so there was no handbook!” The result was two award-winning, non-alcoholic spirits: Caleño Light & Zesty, a clear blend of tropical, citrus and spice botanicals; and golden, warming Caleño Dark & Spicy. The whole brand – ingredients, name, design – is inspired by Ellie’s Latin heritage. “During holidays to Colombia, I remember my grandma making lovely jugos, vibrant drinks with tropical juices. As the second most bio-diverse country in the world, Colombia has an abundance of exotic plants and fruit, which I wanted to capture in the distillation, alongside traditional botanicals such as juniper, cardamom and coriander seeds. “A Caleño is someone from the city of Cali, like my mum, and it’s known as the unofficial capital of salsa – vibrant and upbeat. That fits us perfectly. We don’t see not drinking as a compromise, we see it as fun. ABV 0.0% Try in an... El dorado Muddle 3-4 physalis berries in a glass. Add 50ml Caleño Light & Zesty, 25ml sugar syrup, 10ml fresh lemon juice and ice and stir. And it’s not just abstainers who are driving the boom – more than half are people who drink both alcoholic and non-alcoholic drinks on the same occasion. 1 Herbal smash Muddle 12 basil leaves in a cocktail shaker. Add 40ml Seedlip Garden 108, 10ml sugar syrup, 10ml lemon juice and ice and shake well. Fine-strain into a tumbler with ice. Garnish with a basil sprig. 2 Pink rose spritz Build 50ml Ceder’s Pink Rose, 25ml pink grapefruit tonic water and 75ml non-alcoholic sparkling wine in a large wine glass. Garnish with a few grapefruit slices. 3 Not so dark ‘n’ stormy Pour 60ml Caleño Dark & Spicy into a highball filled with ice. Top up with 120ml ginger beer. Add a few dashes Angostura Bitters and garnish with lime wedges and a sprig of fresh mint. 4 Martino Stir 40ml Æcorn Apéritifs Dry and 40ml Seedlip Garden 108 in a mixing glass full of ice. Strain into a small coupe. Garnish with a lemon twist or an olive. 5 Citrus & ginger Collins Pour 60ml Atopia Spiced Citrus into a highball filled with ice. Add 10ml lime juice, 35ml ginger ale, 35ml soda water and a few dashes Angostura Bitters. Garnish with a slice of fresh ginger and a curl of rhubarb (optional). How to make sugar syrup Bring 100g caster sugar and 250ml water to the boil. Turn off the heat and cool. Store in the fridge in a sterilised container and use within 2 weeks. 5 Caleño Dark & Spicy Offer £15/50cl (was £18) Rum fans will love this non-alcoholic ‘spirit’, distilled with black cardamom, pineapple, coconut, ginger, vanilla and lime.
